What We’re Eating: Make-Ahead Whipped Potato Casserole

Nothing says holiday dinner to me more than a rich potato casserole. This is always a crowd pleaser at our family Christmas dinner, served with glazed spiral ham and an array of fresh vegetables. We just finished the remainder last night and I can attest to the fact that this reheats very nicely, either in the oven or microwave.

Since many people entertain at home on New Years eve or New Years day, the time was right to share this recipe. It’s a great accompaniment to beef, pork or fowl as well as ham. You can very easily make it a day or two ahead and refrigerate without baking and leaving off the nuts. Who doesn’t like make ahead dishes, especially when entertaining?

To serve, leave at room temperature for 30 minutes and then bake following recipe directions. If it needs extra time, tent with foil and reduce heat to 250 degrees for the additional baking time. You don’t really even need the nuts but I think it makes it a little more special. I hope you give this a try for your next special dinner. Happy New Year to all our Momster friends!
