Yep it’s that time of year. The seasons early crop of tomatoes have reached the green markets- not August’s heirloom varieties yet ( the ones that make your eyeballs roll around to the back of your head) but delicious none the less. The early heirlooms seemed small so I went for local Jersey tomatoes. The first thing I think of when I get some of these gems home is tomato sandwiches.

My idea of the perfect sandwich is one made on sourdough or multigrain bread with the lightest coating of mayonnaise and a sprinkling of sea salt. Some like fresh basil leaves or cheese but for me I want a sandwich where the tomato is the star.
