Test Kitchen Trials: Authentic Corn Tortillas

A little while ago, I got to taste La Tortilla Factory’s Hand Made Style corn tortillas. They come in 4 flavors—white or yellow corn, green chile and chipotle. They brought me back to the days when, while vacationing in Puerto Vallarta, Mexico, my sister and I would go to the tortilla factory and buy steaming-hot tortillas right off the conveyor belt.

Recently, I got to taste them again. Melissa Knific, FC’s Assistant Food Editor, met with their PR team. She kindly shared the white corn and green chiles varieties with me and I’ve been enjoying cheese-filled quesadillas and plain tortillas, gently warmed in the microwave and swiped through some hummus. They’re chewy, soft and flexible—they don’t crack when folded or bent in half. I’m going to mix up of a batch of enchiladas, maybe for next week (if I can stop snacking on them).
