St. Patrick’s Day is this Saturday, and in honor of the holiday, I’ve rounded up some Emerald Isle-inspired slow cooker recipes. (I definitely want to make the Guinness-braised short ribs and Irina’s baked potato soup!)
Slow Cooker Beer-Braised Short Ribs: I’ve found that beer is great for infusing slow cooker dishes with flavor, and these Guinness-braised short ribs look like a testament to that.
Slow Cooker Corned Beef and Cabbage: A straightforward St. Patrick’s Day classic that’ll please everyone.
Guinness Corned Beef with Cabbage: I love the idea of making corned beef with Ireland’s premier brew and you could easily adapt this recipe for your slow cooker.
Slow Cooker Irish Lamb Stew: Lamb, potatoes, leeks, celery–everything you’d want in a St. Patty’s day Dinner.
Slow Cooker Vegan Baked Potato Soup: My fellow Slow Cooker Newbie, Irina, made this hearty soup as her very first crock-pot meal and it’s still one of her all-time favorites.
Slow Cooker Vegetarian Chili: Slow cooking beans and veggies in dark beer gave this chili a rich, smoky taste.
Slow Cooker Stout Stew: A hearty stew made with Guinness, beef and potatoes. I don’t think you can go wrong with that combination.
Slow Cooker Beer-Baked Irish Beef: Another beef stew made with Guinness–and bacon!
