Although today is a RECORD heat all over the country (or, at least, in NYC where I live), one of my guiltiest pleasures in the summer is actually a hot dish. Lasagna. I simply love it! One of my favorite things about lasagna is how well developed the flavor is. But, in the summer, I”m often really busy and don’t have time to actually put in the effort to make lasagnas to freeze. Although my fellow Slow Cooker Chronicles gal Heather has made a few lasagnas, I’ve actually never tackled this dish in the crock-pot. And doesn’t that seem kind of silly when there are so many different lasagna variations to choose from? Below are just some of my favorites. I can’t wait to make one of these for dinner!
