Slow Cooker Jerk-Marinated Mahi Mahi

We’re always talking about great chicken, pork or beef recipes over on Family Circle’s Slow Cooker Recipes page. But as someone who’s lost a lot of weight, I try to eat as healthy as I can.
As you can see by my first Slow Cooker attempt, that usually means making vegetarian meals. I loved making last week’s baked potato soup but I wanted to make something different this time. When I opened my freezer and saw the Mahi Mahi fillets I bought earlier in the week, I knew this was it.
The only problem? Fish isn’t really considered one of your typical slow cooker meals, since it is done so quickly. But I was looking for something easy that I could throw into the pot when I got home from work and then serve a few hours later.
After doing some digging around on our site and through Google, I settled on making my own recipe. Inspired by Family Circle’s Jerk-Rubbed London Broil and About.com’s Citrus Fish Recipe, I realized already had all of the ingredients to make a jerk marinade. Coupled with the citrus fish slow cooker directions, I set about to make my dinner.
Making this recipe was really simple. Once I marinated the fish, all I had to do was wait for it to get done. In the meantime, I worked on making some brown rice and steamed broccoli to serve it with.
Slow Cooker Jerk Fish
Makes: 4 servings
Prep: 15 minutes
Slow Cook: 2 hours on HIGH
Ingredients:
(for the Jerk marinade)
1 cup vinegar
1/2 cup soy sauce
1/4 cup lemon juice
1/4 cup olive oil
3 tbsp dry jerk rub
3 tbsp ground thyme
3 tbsp salt
3 tbsp allspice
3 tbsp sugar
1tbsp nutmeg
1 tbsp ginger
1 tbsp black pepper
1 tbsp cinnamon
4 large fillets of Mahi Mahi
Method:
1. Combine all ingredients for a marinade in a large Ziplog bag and mix well.
2. Place each individual fillet in the baggie, seal & shake. Then put the coated fillet into the slow cooker.
3. After coating each piece of Mahi Mahi and putting it in the slow cooker, top with remaining marinade.
4. Set to cook for 2 hours on HIGH. Once done, serve with brown rice and your favorite steamed vegetable.
