Since September, Irina and I–your Slow Cooker Newbies–have been mastering the art of crock-pot cooking. During the past months, we’ve had a few flops (mostly on my part!), but also many successes. To cap off 2011, we took a look back at all the dishes we made and selected our three favorites. We’ll definitely be making these in 2012!

Heather’s Top 3 Slow Cooker Meals of 2011

carnitas

Drunken Pork Carnitas: This was, by far, the best thing I made in the slow cooker all year. (My boyfriend, who cooked and ate every dish with me, agrees.) The pork was tender and juicy with a rich, deep flavor that went perfectly with the spicy mayo, pineapple and avocado we used for garnishes.

Turkey Meatballs: Healthy, hearty and oh so delicious. I want to remake them every time I see the photo.

Applesauce: As I noted in the blog post’s title, it really was the easiest recipe, ever. Apple season can’t come soon enough!

Baked Potato Soup: My first is still my favorite. The flavor of the creamy potato soup was so intense that I still remember it. It was the absolute perfect comforting meal.

Breakfast Baked Apples: Waking up to the warming smells of cinnamon and apple reminded me of a great pie, but I loved having this sweet treat in the morning instead.

Chickpea Curry: A great lunch served over white rice, everyone in the office would comment how great it looked. Plus, it’s packed full of veggies and protein for a healthy meal.
