My First Pie: Peanut Butter & Chocolate Walnut Pie
(with homemade Cinnamon-Vanilla Whipped Cream)

I’m not really a baker. I’ve never been good at it because it’s too precise for me. I like things like slow cooking because I have a little bit of leeway when it comes to following a recipe and it’s not difficult to repair a meal if it’s come out a little bit less than planned.

But when our Assistant Food Editor (and Thanksgiving chat hostess) Melissa made a delicious Double-Coconut Cream Pie to share with the office, I was inspired.

After looking through a lot of our pie recipes, I settled on making the Peanut Butter Pecan Pie for Thanksgiving. The only problem: I couldn’t find any pecans!

Frustrated but refusing to give up, I decided to use some chocolate-covered walnuts that I happened to have in my pantry. I liked walnuts better anyway, but I was still nervous about how it would come out.

Peanut Butter & Chocolate Walnut Pie

Doesn’t the pie look divine? I called it my Peanut Butter & Chocolate Walnut Pie and it was a bit hit at the dinner table. I also made some homemade whipped cream to go along with it.

Homemade Cinnamon-Vanilla Whipped Cream

Ingredients
1 cup heavy cream
1/4 cup powdered sugar
2 teaspoons vanilla extract
2 teaspoons cinnamon

Directions
Combine all ingredients in a large bowl and beat with a hand mixer or standing mixer until it thickens into whipped cream.
