Mo's Bacon Chocolate Chip Pancakes

I have a confession to make: Last month when I featured Mo’s Bacon Chocolate Chip Pancake Mix in our Father’s Day Gift Guide, I hadn’t had the chance to try them. I was going off gut instinct when I included them. How could bacon + chocolate + pancakes not be amazing? Plus, I’d already sampled the Mo’s Bacon Bars that make up the chocolate chip portion of the mix, so I knew it was a no-brainer that it would be good. It sounded like the perfect gift for Dads, especially mine.

I inherited my Dad’s love of anything involving chocolate or bacon, either together or separately, meaning he was bound to go crazy for these unique pancakes. Acting as my Mom’s sous chef this past weekend, we made them for Father’s Day brunch. They were really easy to make, but I brought her laptop into the kitchen and we played this helpful how-to video beforehand just to ensure we knew what we were doing.

And while we didn’t serve them for breakfast in bed—sorry Dad!—turns out my inkling, was spot on. These pancakes were seriously delicious! They tasted like normal chocolate chip pancakes, but with a slight crunch and smoky flavor. We ended up with extra batter at the end, and the buttermilk pancakes without the chips were equally just as good. Add a little syrup on top and this was a perfect—and unexpected—brunch treat!
