I never thought I’d see the day, but I’ve actually eaten all my frozen slow cooker leftovers. For months, my freezer was well-stocked with portions of meatballs, lasagna and chili. And now that I my freezer is empty and my Tupperware cabinet is full, I know that it’s time to whip up some new slow cooker meals.
For inspiration, I turned to Pinterest. Family Circle has an account–and, of course, a board with all our great slow cooker recipes. But I decided to see what other crock-pot dishes people were pinning. I did a search for “slow cooker” and came upon dozens of boards. Here are some of the tastiest-looking recipes I stumbled upon:
General Tso’s Slow-Cooked Pork Tacos with Orange Broccoli Slaw: You know how much I love tacos. Definitely need to try this Asian-inspired recipe.
Crock Pot Buffalo Chicken Lettuce Wraps: A healthy take on the classic bar snack. The lettuce is surely a crisp, fresh complement to the spicy chicken.
Slow Cooker Honey Sesame Chicken: I’d be happy to have these leftovers any day of the week.
Slow Cooker Chicken Taco Chili: Since corn season is almost here, I’d make this recipe with fresh kernels.
Slow Cooker Thai Chicken Noodle Soup: Perfect for any time of year.
Slow Cooker Enchiladas: I can never resist any combination of veggies, tortillas and melted cheese.
Slow Cooker Cheesy Vegetable Chowder: Another recipe with the magic cheese + veggie combo.
Slow Cooker Baked Potatoes: The thought never crossed my mind, but it’s pretty genius. I rarely have the time or patience to bake potatoes, so I usually throw them in the microwave. But this seems like a great way to get tender, thoroughly cooked potatoes while you’re at work.
