A New Take on Pesto I’m a self-proclaimed garlic fanatic. So recently when I discovered garlic scapes, I went nuts. Scapes—the shockingly green, curly tendrils that grow above ground as the bulb is forming underneath—are only available for a short period of the year. (That time is right now!) If you’re a garlic fan like I am, I suggest you get your hands on them.
