Family Circle’s May issue has been out for a few weeks now, but I’m still dying to make the Slow Cooker Carolina Pulled-Pork Sandwiches that grace the cover:

How delicious do those sandwiches look? They got me thinking, too, and I realized that I’ve yet to make a sandwich recipe in my slow cooker–and that’s pretty crazy, since they’re often among the easiest-to-make crock-pot dishes.

So I decided to round up some recipes to get me inspired. Now the only hard part will be deciding which one to make first!

Slow Cooker Carolina Pulled-Pork Sandwiches: Our May cover recipe features a sauce made from vinegar, ketchup, brown sugar and spicy mustard–yum!

Slow Cooker Pulled Buffalo Chicken Sliders: Low-calorie and so simple to make–these mini sandwiches only require four ingredients.

Slow Cooker Cuban Pork Sandwich: In my humble opinion, a good Cuban is one of the most perfectly crafted sandwiches.

Slow Cooker Philly Cheese Steak Sandwiches: If you can’t make it to Philadelphia any time soon, crafting your own cheese steaks in your crock-pot is a nice consolation. Try this recipe from Pillsbury.

Slow Cooker Smoky Beef Brisket: Brisket sandwiches always make me think of summer, though I honestly enjoy them all year round.

Slow Cooker Chicken Caesar Sandwiches: Another great spring/summer recipe. And the photo, on The Girl Who Ate Everything, just looks so delicious.

Slow Cooker Sausage and Peppers: The ultimate hero sandwich–and we’ve got a healthy take on it, too.

Slow Cooker French Dip: This take on the classic comfort food, from All Recipes, is made with my favorite slow cooker secret weapon–beer.

Slow Cooker Cajun Pork Sandwiches: A twist on pulled pork using zesty spices.

Slow Cooker Pepperonici Beef Sandwiches: These spicy sandwiches, from A Year of Slow Cooking, look like a crowd-pleasing option for a casual party.

Slow Cooker Turkey Sloppy Joes: I love making turkey meatballs in my crock-pot, and this looks like an even easier–but just as tasty–take on ground turkey.
